Edamame Salad

Packed with protein and bursting with texture and flavor, this salad comes together in less than 5 minutes and is great as a quick, on-the-go meal or as a side. It's best served cold.

Edamame Salad


  • 12 oz. shelled edamame

  • 3/4 cup dried cranberries (no sugar added preferred)

  • fresh basil leaves (5-6 leaves thinly sliced)

  • 1/2-3/4 cup crumbled vegan feta

  • olive oil

  • black pepper to taste


Add edamame and dried cranberries to bowl. Drizzle with olive oil (until coated) and season with black pepper to taste. Stir in fresh basil and feta.
