Our signature "turkey" meat, stuffed with a decadent, wild rice stuffing with shiitake mushrooms, minced chestnuts, fresh sage, leeks, dried cranberries and dried apricots.  Fresh thyme and minced dried cranberries are tucked under the rice paper "skin". Vegan and gluten-free*.  Contains nuts.
 
It is delivered in a vacuum sealed bag and is SO easy to prepare:
If frozen, defrost overnight in the refrigerator.  Preheat oven to 350 - 400 degrees.  Remove the roast from the vacuum sealed bag and carefully peel off the brown parchment paper.  Place it on a rack in a roasting pan/on a baking sheet, drizzle olive oil over the top of the roast, and roast for 25-35 minutes, basting frequently after the first 15 minutes with any pan juices that have accumulated, until the rice paper is golden brown and crispy.  Rest 5-10 minutes before slicing with a sharp knife.
 
Each roast weighs approximately 2.5 lbs and serves 4-6 people.
